Scallop & Shrimp Ceviche

Serves: 10-12


Ingredients:

  • 1 lb fresh scallops

  • ½ lb fresh shrimp

  • 1 red onion diced

  • 2 tablespoons minced shallots

  • 1 ½ cup diced plum tomatoes (about 4-6 tomatoes)

  • 1 cup diced cucumber

  • ¼ cup chopped fresh parsley

  • 6-8 cloves of garlic minced

  • ¼ cup lime juice (about 2-3 limes)

  • ½ cup lemon juice (about 3-4 lemons)

  • 1 tablespoon of Old Bay Seasoning

  • Sea salt or coarse salt and freshly ground pepper to taste

  • Mango Salsa (store bought or homemade) - ingredients and recipe below for homemade salsa*

Prep:

  • Devein shrimp and chop into small pieces around the size of a dime.

  • Slice scallops (keep scallop upright and slice against the grain)

  • Chop onions, shallots, tomatoes, cucumber, parsley, and garlic

  • Squeeze lemon and lime juice through a strainer into a large bowl

Making the Ceviche:

  • Stir together the lemon/lime juice. Add the scallops, shrimp, onions, shallots, tomatoes, cucumber, parsley, garlic, old bay seasoning, salt, pepper, and mango salsa

  • Marinate and wait: -Toss ingredients together well and marinate in the fridge for at least 2 hours and up to 24.

  • 2 ripe mangoes, peeled, pitted and diced (about 3 cups)

  • 1/2 cup chopped fresh cilantro, loosely packed

  • One lime - juiced

  • 1–2 jalapenos, seeded and diced (leave out the jalapenos for a mild version)
