Scallop & Shrimp Ceviche

Serves: 10-12
Ingredients:
1 lb fresh scallops
½ lb fresh shrimp
1 red onion diced
2 tablespoons minced shallots
1 ½ cup diced plum tomatoes (about 4-6 tomatoes)
1 cup diced cucumber
¼ cup chopped fresh parsley
6-8 cloves of garlic minced
¼ cup lime juice (about 2-3 limes)
½ cup lemon juice (about 3-4 lemons)
1 tablespoon of Old Bay Seasoning
Sea salt or coarse salt and freshly ground pepper to taste
Mango Salsa (store bought or homemade) - ingredients and recipe below for homemade salsa*
Prep:
Devein shrimp and chop into small pieces around the size of a dime.
Slice scallops (keep scallop upright and slice against the grain)
Chop onions, shallots, tomatoes, cucumber, parsley, and garlic
Squeeze lemon and lime juice through a strainer into a large bowl
Making the Ceviche:
Stir together the lemon/lime juice. Add the scallops, shrimp, onions, shallots, tomatoes, cucumber, parsley, garlic, old bay seasoning, salt, pepper, and mango salsa
Marinate and wait: -Toss ingredients together well and marinate in the fridge for at least 2 hours and up to 24.

1/2 cup chopped fresh cilantro, loosely packed
One lime - juiced
1–2 jalapenos, seeded and diced (leave out the jalapenos for a mild version)
