Italian Potato Salad

Serves: 4-6 as a side dish


Ingredients:

  • 6 Red Potatoes - peeled and cut into 1 inch pieces

  • One bunch Flat Parsley, destemmed and coarsely chopped

  • One 8.5 oz can Lima Beans

  • ½ cup Extra Virgin Olive Oil

  • ¼ cup Red Wine Vinegar

  • 2 Tsp Salt

  • 1 Tsp Black Pepper

  • 2 Tsp Garlic Powder

Prep:

  • Peel potatoes

  • Cut into 1 inch pieces

  • Destem and chop parsley

  • Drain lima beans

Directions:

  • Boil potatoes in a large pot until fork tender

  • Combine all ingredients in a bowl (potatoes, parsley - chopped and destemmed, lima beans - drained, EVO, Red Wine Vinegar, Salt, Black Pepper, Garlic Powder)

  • Cover and toss until well combined

  • Refrigerate until chilled

  • Mangia!
