Nonni's Pesto

Ingredients:


  • 1 pound Linguine

  • 4 garlic cloves

  • 8 cups basil leaves

  • ½ cup extra virgin olive oil (plus extra if needed)

  • 4 ounces cream cheese

  • 1 ounce butter

  • Parmesan cheese to taste

  • Kosher salt to taste

Pesto Sauce:

  1. Mince basil leaves and garlic together

  2. Mix in a bowl with EVO, cream cheese, butter along with salt and parmesan to taste.

  3. Cover with a coating of EVO

  4. Set aside


Pasta:

  1. Bring 4 quarts of water to boil

  2. Add 1 ½ tablespoons of salt to water (more or less to taste)

  3. Break linguine in half and add

  4. Cook for 12 minutes or to desired firmness

  5. Save a half ladle of water

  6. Drain the pasta


Mix Pasta and Sauce:

  1. In a bowl mix pasta, pesto sauce and water

  2. Add parmesan to taste and EVO if needed
