Nonni's Pesto

Ingredients:
1 pound Linguine
4 garlic cloves
8 cups basil leaves
½ cup extra virgin olive oil (plus extra if needed)
4 ounces cream cheese
1 ounce butter
Parmesan cheese to taste
Kosher salt to taste
Pesto Sauce:
Mince basil leaves and garlic together
Mix in a bowl with EVO, cream cheese, butter along with salt and parmesan to taste.
Cover with a coating of EVO
Set aside
Pasta:
Bring 4 quarts of water to boil
Add 1 ½ tablespoons of salt to water (more or less to taste)
Break linguine in half and add
Cook for 12 minutes or to desired firmness
Save a half ladle of water
Drain the pasta
Mix Pasta and Sauce:
In a bowl mix pasta, pesto sauce and water
Add parmesan to taste and EVO if needed
